Lucas likes this soup a lot, but always picks around the beans. He eats most of the corn, and chicken, but he mostly likes to soak up the broth with oyster crackers.

I'm a HUGE fan of from-scratch, homemade things, but I'm a busy lady and don't always have time for that. Especially during Robotics Season, my life consists mainly of "dump-a-bunch-of-stuff-in-the-Crock-Pot-and-go" recipes. This is one of my go-to Classics, and Lucas eats it up like I'll never make it again.
The Recipe
IMPORTANT: DO NOT uncover the Crock Pot for at least 30 minutes after you've added the biscuits. It will add a lot of cooking time! No, it's not really Chinchillas, it's Enchiladas (haven't you people ever seen Super Troopers!?). Even though this is Clinton's favorite dish I make, Lucas really likes them, too. They take a while to make, but the great thing is the versatility and simple ingredients! Plus, leftovers heat up FANTASTIC! Serves 4 to 6 adults.
The Recipe
NOTE: Can also be prepared in the Crock Pot! Instead of placing ingredients into a baking dish, put it in the crock pot. Cook for 2 to 3 hours on low. Lucas LOVED this chicken, and really enjoyed the sauce (especially the dipping part! Dip makes everything better!). I served it with cheesy mashed potatoes and green beans from our local Farmer's Market.
